Yogurt Marinated Chicken Kebabs

These tender chicken kebabs can be tucked into a pita, served on a salad, or served as is. Here they are prepared in an oven, but they can be grilled as well.

Makes: 6 servings
Ingredients:
1 cup Greek yogurt
¼ cup chopped fresh mint
3 cloves garlic, minced
1 small onion, minced
2 Tbsp. lemon juice
1 Tbsp. olive oil
¾ tsp. ground ginger
½ tsp. salt
½ tsp. ground cumin
¼ tsp. cayenne pepper
4-6 oz. boneless, skinless chicken breasts, cut into 2-inch cubes
6 pita bread wrapped in aluminum foil
1 cup cleaned and chopped romaine lettuce

Preparation:

Nutrition information per serving: 360 calories, 7 g total fat (1.5 g sat fat), 41 g carbohydrate, 34 g protein, 6 g dietary fiber, 620 mg sodium.
Equivalent to: 2 Grain, 4 Protein, 1 Vegetable
