- cooking spray
- 35 to 40 saltine crackers
- 2 sticks (1 cup) butter
- 1 cup light brown sugar
- 8 ounces (1 1/3 cup) semi-sweet chocolate chips
Preheat oven to 425 degrees F. Line one large or two small jelly roll pans with foil. Spray with non-stick cooking spray and arrange the saltines salt side down on the foil in a single layer. In a medium sauce pan, melt the butter and brown sugar together and boil until it turns a caramel color, a few minutes. Remove from heat and pour over the crackers, covering them evenly. Put the pan into the oven and bake for 3 to 5 minutes, or until just bubbly. Watch carefully. Remove from oven and pour the chocolate chips over the crackers. When the chips start to melt a little, spread them over the crackers with a knife. Put the pan in the freezer for 15 – 20 minutes, or until completely cold. When they come out of the freezer they will be in one big sheet. Remove from foil and crack into pieces. Store in an air tight container. Other toppings can be added such as: mini marshmallows, chopped nuts, coconut, toffee bits, etc. Add when chocolate is melted before freezing.
